Tomato Relish for your Feta Cheese
Ingredients
· 1 Tbsp. Olive Oil
· 4 oz Onions Small Diced
· 1 LB Tomatoes Small Diced
· 1 Tbsp. White Wine Vinegar
· TT Honey
· TT Salt
· TT Pepper
· TT White Wine Vinegar
· 1 Tbsp. Fresh Herbs (Oregano and Parsley mix for me, but feel free to substitute with any fresh herbs)
Instructions
o In a medium-size saute pan over medium-high heat, add the olive oil and add the onions and cook till translucent. Then add the tomatoes and cook until they start to break down a bit. Then add the vinegar and cook until most of the liquid is gone.
o Season with Salt, Pepper, Honey, and if you need to balance with a little bit of vinegar. (Add some to the mixture)
o Cool the mixture down in your freezer or cooler
o Once it is cool add the fresh herbs and double-check for the balance of your flavors.
